Biryani is a flavorful and aromatic rice dish that originated in the Indian subcontinent. It is made with fragrant long-grain basmati rice, meat (such as chicken, lamb, or goat), and a blend of spices. Here's a recipe to make chicken biryani.
Ingredients:
- > 2 cups basmati rice
- > 1 pound (450g) chicken, cut into pieces
- > 1/2 cup plain yogurt
- > 2 onions, thinly sliced
- > 4 cloves garlic, minced
- > 1-inch piece of ginger, grated
- > 2 tomatoes, chopped
- > 2 green chilies, slit lengthwise (optional)
- > 1/2 cup chopped fresh cilantro (coriander leaves)
- > 1/2 cup chopped fresh mint leaves
- > 1/2 teaspoon turmeric powder
- > 1 teaspoon red chili powder (adjust to taste)
- > 1 teaspoon garam masala
- > 1/2 teaspoon ground cumin
- > 1/2 teaspoon ground coriander
- > 1/4 teaspoon saffron strands (optional)
- > 1/4 cup warm milk
- > 4 tablespoons ghee (clarified butter) or vegetable oil
- > Salt to taste
- > Water
Instructions:
1. Wash the basmati rice under running water until the water runs clear. Soak the rice in water for 30 minutes, then drain.
2. In a large bowl, marinate the chicken with yogurt, half of the sliced onions, minced garlic, grated ginger, turmeric powder, red chili powder, garam masala, cumin, coriander, and salt. Allow it to marinate for at least 30 minutes or refrigerate overnight for more flavor.
3. Heat 2 tablespoons of ghee or oil in a large, heavy-bottomed pot over medium heat. Add the remaining sliced onions and cook until they turn golden brown. Remove half of the fried onions and set them aside for garnishing.
4. Add the marinated chicken to the pot and cook until it is browned on all sides. Add the chopped tomatoes and cook until they are soft and mashed.
5.Add the green chilies (if using), chopped cilantro, and mint leaves to the pot. Stir well to combine.
6.In a separate pot, bring water to a boil. Add salt and the soaked and drained basmati rice. Cook the rice until it is 70-80% cooked (parboiled). Drain the rice and set it aside.
7. Layer the partially cooked rice over the chicken mixture in the pot. Drizzle the remaining 2 tablespoons of ghee or oil on top.
8. In a small bowl, soak the saffron strands in warm milk. Drizzle the saffron-infused milk over the rice. You can also sprinkle a few drops of rose water for additional fragrance (optional).
9. Cover the pot tightly with a lid. You can also seal the lid with aluminum foil to prevent steam from escaping. Cook the biryani on low heat for about 25-30 minutes, or until the rice is fully cooked and the flavors have melded together.
10. Remove the pot from the heat and let it rest, covered, for another 10 minutes to allow the flavors to further develop.
11. Gently fluff the rice with a fork, ensuring not to break the grains. Serve the chicken biryani hot, garnished with the reserved fried onions.
