How To Cook Tandoori Roti

To cook tandoori roti, you will need a few basic ingredients and access to a tandoor or oven. Tandoori roti is a popular Indian bread that is typically cooked in a clay oven called a tandoor, but you can achieve similar results using a regular oven. Here's a recipe for making tandoori roti at home:

Ingredients:

- 2 cups whole wheat flour (atta)

- 1 teaspoon salt

- Water (as needed)

- Ghee or melted butter (for brushing)

Instructions:

1. In a mixing bowl, combine the whole wheat flour and salt. Mix well.

2. Gradually add water to the flour mixture, a little at a time, and knead the dough. The dough should be soft and pliable but not sticky. Adjust the water as needed.

3. Once the dough comes together, continue kneading for about 5-7 minutes until it becomes smooth and elastic. You can apply a few drops of oil to your hands to prevent sticking.

4. Divide the dough into small lemon-sized portions and shape them into round balls.

5. Preheat your oven to its highest temperature. If you have a pizza stone or a baking stone, place it in the oven while preheating. This will help replicate the tandoor-like effect.

6. Take one dough ball and roll it out into a circle or oval shape, approximately 6-8 inches in diameter. Dust the rolling surface and the dough with some dry flour to prevent sticking.

7. Once the oven is preheated, remove the baking stone or pizza stone from the oven (if using). Carefully place the rolled roti onto the hot stone. Alternatively, you can use a baking sheet lined with parchment paper.

8. Place the stone or baking sheet back into the oven and bake the roti for about 2-3 minutes on one side until it puffs up and develops some brown spots. Keep an eye on it to avoid burning.

9. Once you notice the roti has puffed up and the bottom side is cooked, remove it from the oven using tongs or a spatula. Be cautious as the stone or baking sheet will be very hot.

10. Brush the cooked side of the roti with ghee or melted butter.

11. Flip the roti and place it directly on the stovetop flame for a few seconds. This step will help it get the characteristic charred spots and smoky flavor. Keep rotating it to avoid burning.

12. Remove the roti from the flame and brush the other side with ghee or melted butter as well.

13. Repeat the process for the remaining dough balls, rolling, baking, and then charring them on the stovetop flame.

14. Serve the hot tandoori rotis with your favorite curries, dal, or any other accompaniment of your choice.

Enjoy your homemade tandoori rotis!
