Kachori is a popular Indian snack that is deep-fried and filled with a spicy mixture. It can be made in various flavors such as potato, lentil, or onion. Here's a basic recipe for making kachori:
Ingredients:
For the dough:
- 2 cups all-purpose flour (maida)
- 2 tablespoons oil
- Salt to taste
- Water for kneading
For the filling:
- 1 cup yellow moong dal (split yellow lentils) or mashed potatoes (cooked and seasoned)
- 1 teaspoon ginger paste
- 1 teaspoon green chili paste (adjust to taste)
- 1 teaspoon fennel seeds (saunf)
- 1 teaspoon cumin seeds (jeera)
- 1/2 teaspoon red chili powder
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon garam masala
- Salt to taste
- Oil for frying
For the dipping sauce:
- Tamarind chutney or green chutney (optional)
Instructions:
1. In a mixing bowl, combine the all-purpose flour, oil, and salt. Mix well until the mixture resembles breadcrumbs.
2. Gradually add water and knead the dough until it becomes smooth and firm. Cover it with a damp cloth and let it rest for 15-20 minutes.
3. Meanwhile, prepare the filling. If using moong dal, wash and soak it in water for 2-3 hours. Drain the water and grind the soaked dal to a coarse paste.
4. Heat a little oil in a pan and add fennel seeds and cumin seeds. Once they start crackling, add ginger paste and green chili paste. Sauté for a minute.
5. Add the ground dal (or mashed potatoes) to the pan along with red chili powder, turmeric powder, garam masala, and salt. Cook the mixture on medium heat until the dal/potatoes are cooked and the mixture is dry. Remove from heat and let it cool.
6. Divide the dough into small balls and flatten each ball with your palms. Place a spoonful of the filling in the center and bring the edges together to seal it, forming a stuffed ball. Repeat the process for the remaining dough and filling.
7. Heat oil in a deep pan or kadai for deep-frying. Make sure the oil is hot but not smoking.
8. Gently slide the stuffed balls into the hot oil and fry them on medium heat until they turn golden brown and crispy. Flip them occasionally to ensure even frying.
9. Once the kachoris are cooked, remove them from the oil using a slotted spoon and drain excess oil on a paper towel.
10. Serve hot kachoris with tamarind chutney, green chutney, or any other dipping sauce of your choice.
