How to make pav bhaji

To make Pav Bhaji, a popular Indian street food dish, you will need the following ingredients:

For the Bhaji:

- 4-5 medium-sized potatoes, boiled and mashed

- 1 cup mixed vegetables (such as cauliflower, peas, carrots), boiled and mashed

- 1 large onion, finely chopped

- 1 large tomato, finely chopped

- 1 green bell pepper (capsicum), finely chopped

- 2-3 cloves of garlic, minced

- 1-inch piece of ginger, grated

- 2 tablespoons pav bhaji masala (readily available in stores)

- 1 teaspoon red chili powder (adjust to your spice preference)

- 1/2 teaspoon turmeric powder

- Salt to taste

- 2 tablespoons oil or butter

For the Pav (Bread Rolls):

- 8-10 pav (dinner rolls)

- 2 tablespoons butter

For Garnish:

- Finely chopped onions

- Fresh coriander leaves (cilantro)

- Lemon wedges

Instructions:

1. Heat oil or butter in a large pan or kadai on medium heat.

2. Add minced garlic and grated ginger. Sauté for a minute until fragrant.

3. Add chopped onions and cook until they turn translucent.

4. Add chopped tomatoes and cook until they soften and become mushy.

5. Add chopped bell peppers and sauté for a couple of minutes until they are slightly tender.

6. Add pav bhaji masala, red chili powder, turmeric powder, and salt. Mix well and cook for a minute to roast the spices.

7. Add the boiled and mashed potatoes and mixed vegetables. Mix everything together, ensuring the spices are evenly distributed.

8. Mash the vegetables and potatoes further with a potato masher or the back of a spoon to achieve a smoother consistency.

9. Add a little water to adjust the consistency if needed. Simmer the bhaji for 10-15 minutes on low heat, stirring occasionally.

10. Meanwhile, slice the pav (dinner rolls) horizontally, keeping one side intact.

11. Heat a griddle or a pan and spread butter on it. Toast the pav rolls on both sides until they turn golden brown.

12. Once the bhaji is cooked and the flavors have melded, turn off the heat.

13. Serve the bhaji hot with a dollop of butter, garnished with finely chopped onions and fresh coriander leaves.

14. Squeeze some lemon juice over the bhaji for an extra tangy flavor.

15. Serve the pav alongside the bhaji, and enjoy!

Pav Bhaji is typically served with a side of tangy tomato chutney or tamarind chutney. You can also serve it with a side of sliced lemon and additional chopped onions.
