Masala dosa is a popular South Indian dish made with fermented rice and lentil batter, filled with a spiced potato filling. Here's a recipe to make masala dosa:
Ingredients:
For the dosa batter:
- 2 cups parboiled rice
- 1/2 cup urad dal (split black gram)
- 1/2 teaspoon fenugreek seeds
- Salt to taste
- Water for grinding
For the potato filling:
- 4 medium-sized potatoes, boiled and mashed
- 1 tablespoon oil
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- 1 onion, finely chopped
- 2 green chilies, finely chopped
- 1/2 inch ginger, grated
- A few curry leaves
- 1/2 teaspoon turmeric powder
- Salt to taste
- Fresh coriander leaves, chopped
For the dosa:
- Oil or ghee for cooking
Instructions:
1. Wash the rice, urad dal, and fenugreek seeds separately. Soak them in water overnight or for at least 6-7 hours.
2. Drain the water from rice, urad dal, and fenugreek seeds. Add them to a blender along with some water and grind them to a smooth batter. The consistency should be slightly thicker than pancake batter.
3. Transfer the batter to a large bowl, add salt, and mix well. Cover the bowl and let the batter ferment in a warm place for 8-10 hours or overnight until it doubles in volume.
4. To prepare the potato filling, heat oil in a pan over medium heat. Add mustard seeds and cumin seeds. When they start to splutter, add chopped onions, green chilies, grated ginger, and curry leaves. Sauté until the onions turn translucent.
5. Add turmeric powder and salt. Mix well. Then, add the mashed potatoes and stir to combine everything. Cook for a few minutes, allowing the flavors to blend. Finally, add chopped coriander leaves and mix well. Remove from heat.
6. Heat a non-stick dosa tawa (griddle) or a flat pan. Once hot, pour a ladleful of dosa batter onto the center of the tawa.
7. Using the back of the ladle, spread the batter in a circular motion to form a thin, even layer. Drizzle some oil or ghee around the edges of the dosa.
8. Cook the dosa on medium heat until the edges turn golden brown and crispy. Spoon some potato filling onto the center of the dosa.
9. Carefully fold the dosa from both sides, enclosing the potato filling, to form a roll or a half-moon shape.
10. Remove the masala dosa from the tawa and serve hot with coconut chutney, sambar, or tomato chutney.
