Make panipuri homemade style

 Panipuri is a popular Indian street food that consists of crispy hollow puris filled with a spicy and tangy mixture of flavored water, tamarind chutney, chickpeas, potatoes, and various spices. It's a delightful and flavorful snack enjoyed by people of all ages. Here's a basic recipe to make panipuri at home:



Ingredients:

For the puris:

- 1 cup semolina (suji/rava)

- 1/4 cup all-purpose flour (maida)

- A pinch of baking soda

- Water (as needed)

- Oil (for deep frying)


For the filling:

- 1 cup boiled and mashed potatoes

- 1/2 cup boiled chickpeas

- Tamarind chutney (store-bought or homemade)

- Green chutney (coriander and mint chutney, store-bought or homemade)

- 1 small finely chopped onion (optional)

- Chaat masala (a spice mix available in stores)



For the flavored water:

- 2 cups chilled water

- 2 tablespoons tamarind pulp

- 1 tablespoon mint-coriander chutney

- 1/2 teaspoon roasted cumin powder

- 1/2 teaspoon black salt

- 1/4 teaspoon red chili powder (adjust to your spice preference)

- Salt to taste

- 1 teaspoon jaggery or sugar (optional)


Instructions:


1. Puris:

- In a mixing bowl, combine semolina, all-purpose flour, baking soda, and a pinch of salt.

- Gradually add water and knead the dough until it becomes smooth and stiff.

- Cover the dough with a damp cloth and let it rest for 15-20 minutes.

- After resting, knead the dough again and divide it into small equal-sized balls.

- Roll each ball into a thin disc, around 1.5 to 2 inches in diameter.

- Heat oil in a deep frying pan over medium heat. Fry the puris until they puff up and turn golden brown.

- Remove the puris from the oil and place them on a paper towel to remove excess oil. Let them cool.


2. Flavored Water:

- In a large mixing bowl, combine chilled water, tamarind pulp, mint-coriander chutney, roasted cumin powder, black salt, red chili powder, salt, and jaggery/sugar (if using).

- Mix well until all the ingredients are well combined. Adjust the flavors to suit your taste preferences.


3. Filling:

- In a separate bowl, mix boiled and mashed potatoes with a pinch of chaat masala and salt.

- In another bowl, mix boiled chickpeas with a pinch of chaat masala and salt.


4. Assembling Panipuri:

- Carefully make a small hole in the center of each puri, creating a cavity for the filling.

- Stuff a little potato mixture and chickpeas into each puri.

- Add a few chopped onions if desired.

- Drizzle some tamarind chutney and green chutney into each puri.


5. Serving:

- Arrange the stuffed puris on a serving plate.

- Just before serving, pour the prepared flavored water into each puri using a small spoon or gently dunk them into the bowl of flavored water to fill them up.

- Serve immediately and enjoy the burst of flavors in each bite.


Note: Panipuri is typically consumed immediately after assembly, as the puris may become soggy if left sitting for too long.
