How to make chicken lolipop

 Chicken lollipop is a delicious and popular appetizer in many Asian cuisines, especially in Indian and Chinese cooking. It's made from chicken wings or drumettes, where the meat is pushed down to create a lollipop-like appearance. Here's a simple recipe to make chicken lollipops:



Ingredients:

- Chicken wings or drumettes (about 12 pieces)

- 2 tablespoons soy sauce

- 1 tablespoon ginger-garlic paste (a mix of grated ginger and minced garlic)

- 1 tablespoon red chili sauce or Sriracha sauce (adjust to your spice preference)

- 1 tablespoon tomato ketchup

- 1 tablespoon vinegar (white or apple cider vinegar)

- 1 teaspoon garam masala (or Chinese five-spice powder for an alternative flavor)

- 1/2 teaspoon black pepper powder

- 1 egg

- 2 tablespoons cornstarch or all-purpose flour

- Salt to taste

- Cooking oil for deep frying


For the garnish:

- Finely chopped cilantro (coriander leaves)

- Sliced onions

- Lemon wedges







Instructions:

1. Prepare the chicken lollipops:

   - If using chicken wings, cut the tips off and discard them.

   - Push the meat down towards the thicker end of the bone to create the lollipop shape. Remove any excess skin and cartilage from the bone.


2. Marinate the chicken:

   - In a bowl, combine soy sauce, ginger-garlic paste, red chili sauce, tomato ketchup, vinegar, garam masala, black pepper powder, and salt.

   - Add the chicken lollipops to the marinade and coat them well. Cover the bowl and let the chicken marinate for at least 1 hour in the refrigerator (for better flavor, marinate overnight).


3. Prepare the batter:

   - In a separate bowl, beat the egg and add cornstarch (or all-purpose flour). Mix until you get a smooth, lump-free batter. The batter should be thick enough to coat the chicken lollipops evenly.


4. Fry the chicken lollipops:

   - Heat oil in a deep frying pan or a deep fryer to 350-375°F (175-190°C).

   - Dip each marinated chicken lollipop into the batter, ensuring it's coated well, and let the excess batter drip off.

   - Gently lower the coated chicken lollipop into the hot oil and fry them in batches for about 6-8 minutes or until they turn golden brown and are cooked through.

   - Remove the fried chicken lollipops from the oil and place them on a plate lined with paper towels to absorb excess oil.


5. Garnish and serve:

   - Arrange the chicken lollipops on a serving plate.

   - Garnish with finely chopped cilantro and sliced onions.

   - Serve hot with lemon wedges and additional chili sauce or ketchup for dipping.
